Roasted Baigan with Caramelised Onions

This is done the same way as baigan choka except I cut up and caramalise a whole onion with as many cloves of garlic as you would like.

Stew chicken, red beans and rice

Today we opted for stew chicken, red beans and rice. My mom's choice. The chicken was portioned out and seasoned and frozen. I did not want to wait for it to thaw so I placed the block of chicken pieces in the caramelized sugar just like that. I allowed it to bunje somewhat and then added water and then ketchup and then red beans from the tin. I already had the rice washed and then boiled. I bought an avocado but too bad it would not be ready for today's lunch. I was worried that the stew would be too dark but it turned out nicely brown in the end.

Quick One Pot Pelau

My mom wanted to do the cooking today. We used what was left of the chow mein ingredients and added chicken, rice, pimento, coconut milk, butter and seasoning. Wash the rice. Rinse the cut up veges. The chicken was already cleaned and seasoned and in pieces from the freezer and just had to thaw somewhat. Pelau is a simple and quick one pot meal. Simply stew the chicken, add ketchup and all the ingredients. Flavor wise I prefer a medium brown pelau and in between dry and wet. Pelau goes well with avocado, cole slaw or green salad. Golden Ray butter is nice but we had none plus we are trying to eat less salt. I like brown rice or I would try couscous if I had those to make it healthier.

Tropical Banana Pudding

This works best with overripe bananas but just ripe bananas will work too. When the banana is overripe, the taste and consistency is like a barbadine drink. Simply place the banana in some milk and use a fork to break apart the banana. The consistency should be lumpy. You can then add coffee or flax seed powder or walnuts or any sort of healthy addition that you like. In the photo I did not have overripe bananas that day.

Chow Mein and Whole Wheat Bread

It was one of those days. We were not sure what to make for dinner. I had to go to the grocer for toilet paper so I would be able to pick up ingredients. I wanted red bean burgers but mom wanted chow mein so we went with chow mein. I do not fuss once it is healthy, easy to digest and simple to make. I got carrots, cabbage, and sweet peppers. Then some maggi all purpose seasoning. There was actual chow mein seasoning but I was scared of the MSG but I still do not know if what I settled on has MSG. My mom cut up the ingredients and I would do the sauteing and dishing out. I also made the tea. By the way, this is not my first attempt at a cooking blog and regular cooking. I used to do a lot of cooking when I was vegan. One day I will probably return to being vegetarian and then being vegan. It just feels like the right thing to me. Here are some photos. So basically cut up and rinse with water and vinegar. Saute in some oil. Then add seasoning, butter and black pepper. The secret for me f
